Arugula is a delicious annual green and is best harvested when the leaves are about 2-3 inches long. This plant grows similar to lettuce but adds an extra peppery kick in flavor when added to salads. The Slow Bolt Arugula has an extended growing time, allowing you to harvest the leaves for longer before the plant begins to flower, changing the flavors.

Sow in early spring when the soil can be worked or in late summer/early fall. Alternatively, succession plant every 2-3 weeks to have a more continuous harvest.
