Hyssop grows to 2-3 feet tall as a hardy evergreen perennial shrub. Once established, the plant produces vibrant blue-violet spikes of flowers that can be used in salads and teas. Originally from Europe, this herb has naturalized to North America. People today still use hyssop leaves and flowers for their medicinal properties as well as for flavoring in stews, broths, and soups. Hyssop can also be used in cooking as a substitute for mint.

Direct sow the seeds outdoors, 8-10 weeks before the last frost date. Alternatively, sow the seeds indoors and transplant outdoors after the last frost date, when the seedlings are big enough to handle.
