Blue Hubbard Winter Squash is a favorite for its large fruits and long storage. Reportedly to have made the long sea journey aboard a ship in the mid-1800s, from the West Indies to Massachusetts. This squash can store for up to 6 months (at 50-60 degrees Fahrenheit). The fruits grow up to 15-40 pounds apiece and are greyish-blue when mature. The orange inner flesh is sweet in flavor and excellent when cooked like sweet potatoes, as a pumpkin substitute, or when you’d typically use butternut squash.
Direct sow seeds into your garden, after the last frost. Alternatively, start seeds indoors and carefully transplant outdoors after danger of frost has passed, careful not to disturb the roots.
The fruits are ready to harvest 50-55 days after the fruits begin to develop; harvest before the first frost in the fall. To cure the fruits, leave in the sun for 5 to 7 days or indoors in a well-ventilated area at 80-85 degrees Fahrenheit.
